Liam Colucci

Liam is a chef who has worked in 3* Michelin kitchens, and has cut his teeth in the innovative zero-waste kitchen at Silo, where he was a chef and then sommelier. He was also a head chef of Popham’s, one of the most successful bakeries in London. Liam’s heritage as an Italian-American from a long-line of successful Italian restaurateurs, means hospitality is in his bones. 

Barclay Bram

Barclay is an anthropologist with a phd from Oxford University, who has worked in a number of major London restaurants and has written about food for top publications like the Economist, Granta, Vice and is a regular contributor to Vittles. He has done pop-ups at Blain | Southern Berlin, Bright, Kraviz Gallery and worked as a private chef for clients including Jefferson Hack, founder of Dazed&Confused and stylist Katy England. His pop-up Bracia has been awarded a prestigious residency at Chateau de la Haute-Borde in the Loire Valley in September
